Ingredients

    1 lb turkey sausage
    1 onion, chopped
    1 green bell pepper, chopped
    3 cloves garlic, minced
    4 cups reduced sodium chicken broth
    1 3/4 can no sodium added tomato sauce
    1 cup no sodium added petite diced tomatoes
    1/4 tsp crushed red pepper
    4 Dreamfield low carb lasagna noodles, broken
    1/2 cup chopped fresh basil
    3 Tbsp parmesan cheese, shredded
    1/2 cup fat free mozzarella cheese, shredded

Tips



Directions

1. Heat a large stockpot over medium-high heat. Add the sausage, onion, bell pepper, and garlic. Cook, stirring occasionally, until the sausage is crumbled and browned, about 8 10 minutes.

2. Add the broth, tomato sauce, diced tomatoes and crushed red pepper. Bring to a boil. Reduce the heat and simmer, stirring occasionally, until the flavors are blended, about 20 minutes. Add the noodles; bring to a boil. Reduce the heat and simmer, uncovered, stirring occasionally, until the soup thickens slightly and the noodles are tender, 10 12 minutes. Remove from the heat; stir in mozzarella, basil, and the Parmesan.

  • This is delicious-it was a hit with the whole family-picky eaters included. Instead of adding the bell pepper (picky eater issue) I finely diced it and sprinkled it over my bowl of soup after I served it. I also added a couple more lasagna noodles so the kiddo could have more pasta in hers. - 10/1/12
