Introduction

Quick mix of chopped chicken, rice, broccoli and diced tomatoes, and I don't have a taste for brown rice, so I used long grain. Quick mix of chopped chicken, rice, broccoli and diced tomatoes, and I don't have a taste for brown rice, so I used long grain.
Number of Servings: 8

Ingredients

    10 oz pkg. kroger frozen chopped broccoli
    1 lb.tyson all natural chicken tenderloins
    1-10 3/4 oz. can of campbells healthy request cream of chicken soup
    2 cups cooked Mahatma's long grain rice
    1 cup kroger reduced fat mild cheddar cheese (divided into 1/2 cup each)
    3T hellman's light mayo
    1-14.5 oz can of kroger peeled diced tomatoes(italian style)

Tips

This is my first time making this so I hope you enjoy it, I would also be interested in knowing if anyone tweaks it.


Directions

Boil your chicken for 20 minutes, when it's cooled off chop in 1 inch pcs. and set to the side. Cook frozen broccoli in microwave with a small amount of water for 2 min. and set to the side. In a bowl mix soup and mayo, then add your chicken, cooked rice, broccoli, diced tomatoes, and 1/2 cup of your cheese, mix well. Spray casserole dish with pam and then add your mixture, put 1/2 cup of your cheese on top, bake for 20 min. covered, and 10min. uncovered to melt your cheese, let cool for about 15 minutes and then enjoy!
