Introduction

Ingredients

    Sweet Potato,sausage links, peppers, onions, garlic,celery,poultry seasoning, eggs and milk, Parmesan if desired.

Tips

I used to make this with white potatoes and it was a staple for us on the weekends. Since i've found a new love for sweet potatoes, i'm trying them in everything!! LOL This one was a winner though for sure and using maple flvored sausage just topped it off! It was not sweet tasting, but had a hint of sweetness balanced by the veggies and poultry seasoning!! HOpe you enjoy this with as much enthusiam as we did the first time!!


Directions

Saute sausage links with onions, celery,peppers, garlic, until onions are tender. Then add cubed sweet potato and poultry seasoning. Stir and cover. Stir occasionally until potatoes are cooked to fork tender. Then mix eggs with milk...like for scrambled eggs. Pour over sausage, potato mixture evenly. Cover and turn heat to low. When eggs are almost fully cooked, top with cheese and recover until cheese melts. Enjoy!!
p.s ...wrap some in a tortilla for a breakfast burrito on the go!
