Alouette Twice Baked Potatoes

Number of Servings: 4


    2 medium baking poatoes
    1 egg
    Pinch of nutmeg
    1 Green onion, chopped
    1/2 C Alouette Light Garlic and Herbs Spreadable Cheese


It takes longer, but I very much prefer these baked, at least for the second part. I always just bake for the entirety of if.


Scrub and dry potatoes. Pierce with fork. Microwave on high for 8-10 minutes or until soft, or bake at 350 degrees for one hour or until soft. Cut potatoes in half. Scoop out flesh into medium bowl, leaving about 1/4 inch around edge of potato. Mash with fork or mix with a hand held mixer adding egg, nutmeg, green onion, and Alouette until well mixed. Spoon back into potato shells. Place on microwave-safe dish and microwave on high for 1-2 minutes or until thoroughly heated or place on oven-safe dish and bake at 350 degrees for 15 minutes or until thoroughly heated.
