Southwestern Red Quinoa Bowl

Ingredients

1 cup red quinoa (or traditional)
1 cup brown rice
1 can black beans
1 can chick peas
1 can corn
1 red bell pepper
6-10 white mushrooms
1 sweet onion
1 tsp olive oil
Garnish with:
sliced avocado
light sour cream or cream cheese
hot sauce and/or salsa
Tips
I usually cook for one, and this works really well for repeated meals (as long as that doesn't bother you), it is filling and healthy and has a decent amount of protein.
Directions
Prepare rice and quinoa as directed (separately). Sauté onions and mushrooms. Combine all in a crockpot (or large pot). Add remaining ingredients. Warm in crock pot or stove on low. Garnish as desired (recipe is calculated with 1/3 of an avocado, and hot sauce).
