Sausage, Potato & Cabbage Meal

Introduction

This is a simple, one-pot dish my sister-in-law makes. It's satisfying and hearty. I usually serve it with cornbread on the side. This is a simple, one-pot dish my sister-in-law makes. It's satisfying and hearty. I usually serve it with cornbread on the side.
Number of Servings: 8

Ingredients

    10 small New (red) potatoes, quartered
    1 head green cabbage, shredded
    1 package (16 oz) lean turkey sausage
    1.5 cups water
    4 tbs butter (or margarine)
    1 tsp salt (optional)
    0.5 tsp pepper (or to taste)

Directions

In a large stock pot, brown the sausage (no oil is needed, but can be added if desired.) After sausage is browned, add potatoes, cabbage, butter and water. Cover and simmer over low heat, allowing potatoes and cabbage to steam (about 20 mins or until potatoes are tender.) Remove from heat, add salt & pepper, and serve.

Serving Size: About 8 1-cup servings
