Broccoli Quiche

Broccoli Quiche

Introduction

A great dish for Sunday brunch. A great dish for Sunday brunch.
Number of Servings: 4

Ingredients

    1 cup egg substitute
    1/4 cup fat free half and half
    1/4 cup skim milk
    3 oz low fat swiss cheese
    1 large stalk broccoli
    1/2 cup canned mushrooms

Directions

Preheat oven to 400*F. Steam and chop broccoli.
Add broccoli and mushrooms to cake pan sprayed with nonstick cooking spray.
Mix egg substitute with half and half and skim milk.
Pour egg mixture over broccoli.
Sprinkle with cheese.
Bake in 400*F oven approximately 40 minutes.

    I used egg whites instead of substitutes. Chopped broccoli and low fat cheddar mixed in. No mushrooms but it was very good. Next time chopped red pepper and chopped onions and black pepper for more flavour. - 9/5/12

    Thankyou, this was really good. My BF really enjoyed it as well. I used fresh mushrooms and added a little bit of minced onion. I aso had to ue Mozzarella as that was all I had. It would have been even better with the swiss. Will make again soon. - 10/29/08

    I made this Sunday and it was FANTASTIC and easy to make. I added chopped green onions and a couple dashes of Tobasco Hot Sauce to enhance the flavor. Had leftovers this morning - a great breakfast for a Monday morning! Sometimes substitute fresh spinach. - 3/17/08

    This was delicious. It would help in the directions if it specified what size cake pan. Quiche are usually in a pie plate, so that's what I used. - 1/27/08

    This sounds wonderful in theory, but not practical as 1 packet or 200mls (which is not even a cup) of egg replacer is equivalent to 66 eggs! Also what is half and half please? Never heard of that.

    Turned out delicious!
    My changes: no mushrooms, used frozen steam-able broccoli (1 cup), used Lactose-free 2% milk in place of skim and half-n-half, replaced Swiss with Lactose-free Sharp Cheddar. Added 1/4 cup chopped onion, 1/4 cup chopped green pepper. garlic salt. Put in a 8x8 square cake pan - 11/17/13
