Halibut with coconut curry sauce

Number of Servings: 4

Ingredients

    4- 6oz pieces of halibut center cut
    1 cup chopped onion
    1 TB minced ginger
    1/2 cup chopped scallions
    1 Cup lite coconut milk
    1 TB sugar
    1 TB fish sauce
    3/4 tea red curry paste
    lime and basil for garnish (optional)

Directions

Heat non stick skillet and spray oil, sear halibut for 3-4 minutes and turn over continue to cook halibut over medium heat, until fish easily flakes, remove to platter and keep warm. Spray same pan with more oil and add onions, ginger and scallions, cook until onion is soft. Add remaining ingredients and bring to a boil continue to cook for additional minute. Remove from heat add lime and basil, pour mixture over fish and serve.

Serving Size: makes 4 6ounce servings
