1 C whole wheat couscous
1/ 1/4 C water
1 C parsley, chopped
4 large scallions, chopped
1/4 C pine nuts
3 T olive oil
1/2 cucumer, diced
2 oz. reduced fat feta cheese, crumbled
Carefully add the water to the pan and stir. Cover and turn heat down to simmer. Cook for 20 minutes or until all liquid is absorbed.
Allow couscous to cool.
Add all other ingredients along with the remaining 2 T of olive oil.
Add salt and pepper to taste.
Refrigerate for several hours or overnight to blend flavors.
Serving Size: approximately 8 servings
