Veg Fried Rice (cleaning out the freezer)

Introduction

I had a bunch of cartons of rice from Chinese takeout in the freezer and some vegetables I wanted to use before they aged. Adapted this from several recipes on the internet. I'm not much of a rice fan (as evidenced from my freezer's contents) but I think very immodestly that this beats any fried rice I've had out. It's totally due to the sesame oil and ginger. Ingredients

    White Rice, medium grain, 5 cup(remove)
    Asparagus, fresh, 2 cup(remove)
    Carrots, raw, 2 cup, chopped(remove)
    Onions, raw, 1 cup, chopped(remove)
    Garlic, 5 cloves(remove)
    Ginger Root, 6 tsp(remove)
    *Kikkoman Lite Soy Sauce, 2 tbsp(remove)
    Egg, fresh, 4 small(remove)
    *Peanut Oil, 3 tbsp(remove)
    Sesame Oil, 1 tbsp(remove)

Tips

Pretty much any vegetable will do--I will try bell peppers, bok choy, broccoli, spinach, etc in the future. Adding leftover proteins--chicken, pork, fish--is a no brainer, too. This freezes well. I batch cook for work lunches and fast dinners and this recipe works for this purpose.


Directions

Chop asparagus into 1" pieces. Chop carrots (I used baby carrots) into 1/4" pieces. Heat peanut oil. Saute minced garlic and onions 1-2 minutes, then add ginger (minced), asparagus and carrots. Stir fry til soft (~10 min). Add rice and stir. Add soy sauce & sesame oil & stir. Add eggs (scrambled) and stir. It should be done after a minute or two.
