Chocolate Coconut Quinoa Bake

Ingredients

1/4 cup uncooked quinoa
1/2 cups water
3 Tbsp egg whites
1/4 cup unsweetened coconut milk
1 tsp. unsweetened cocoa powder
1/2 tsp. vanilla extract
1 Tsp. chopped almonds, divided

Directions
Preheat the oven to 350 F. Lightly oil two 6oz ramekins or baking dishes, set aside.
In a medium-sized sauce pan over medium-high heat, combine the water and quinoa. Bring the mixture to a boil, cover and simmer for about 7 minutes, or until most of the liquid has been absorbed. Turn off the heat and fluff the quinoa with a fork.
Meanwhile, beat the egg whites in a medium-sized mixing bowl. Add the coconut milk, vanilla extract and cocoa powder; whisking until combined, about 1 minute. (The cocoa powder may not completely be mix in)
Evenly divide the quinoa mixture in the two prepared baking dishes, stir in almonds and cocoa powder. Evenly distribute the egg and milk mixture over top, mixing gently.
Evenly top with almonds.
Bake for 30- 35 minutes, or until golden brown on top. Allow the baked quinoa to cool for 10 minutes on a wire cooling rack before eating.
