Slow Cooker Potato Leek Soup (2 cup serving)

Introduction

Number of Servings: 8

Ingredients

    Chicken broth to fill 4 quart crockpot (I used chicken base from Costco mixed w/warm water, adjust amount to taste)
    3 leeks (I used the bottom 2/3, finely sliced)
    1 pound potatoes (about 3 medium), 1/2 inch cubes
    2 TB garlic puree (or approximately 6 crushed cloves)
    1 medium onion, finely diced
    1/2 cup instant dry milk
    Salt and pepper to taste


Tips

This is a really adaptable recipe. Add crumbled bacon, milk, broccoli, etc., depending on what you have in the fridge that needs to be used up.


Directions

Add all ingredients to 4-quart crockpot, adding dry milk last, stir to dissolve.
I cooked at high for 2 hours, stirred, then rest of the day at low but you can just put on low in the morning before work and it'll be ready when you come home.

Stir before serving, add salt and pepper and possibly more chicken base to taste.
