Easy Beef Pho

Introduction

Spicy, fresh soup that is very easy to make and a great way to use up any extra vegetables. Spicy, fresh soup that is very easy to make and a great way to use up any extra vegetables.
Number of Servings: 2

Ingredients

    Broth:
    1 Can of Beef consume
    2.5 cups of water
    1 tsp cinnamon
    2 tsp hot pepper flakes
    1 tbls dried coriander
    1 tbsp garlic powder or 1 clove of fresh crushed garlic
    3 tsp ginger -ground or fresh
    2tsp sesame oil
    1 tsp siracha hot chili sauce
    0.5 cup chopped onion

    2 cups Vermicelli rice noodles
    1.5 cups chopped Bok Choy
    3/4 cup Red Bell pepper sliced thinly
    1/2 cup bean sprouts
    4 oz beef steak cut into very thin slices
    1/4 cup sliced scallions / green onions



Tips

Could make with chicken and chicken broth. Also can add whatever vegetables you would like, ex peas, grated carrots


Directions

Add ingredients for broth in a pot and boil, then simmer for approx 20 mins. Add as much or as little pepper flakes and siracha as you want.

Meanwhile cut up vegetables and put aside. Put rice noodles in a bowl and pour boiling water over top and soak for 8-10 mins until soft, strain and divide noodles into 2 large bowls.
Cut up beef while it is still slightly frozen, slice it as thin as possible.
Once broth is done, add vegetables to each bowl, except for Bok Choy.
Add beef and bok choy into broth on the stove to let it quickly cook for no more than 30 secs to 1 minute, as they will continue cooking in the broth after it is taken off the stove.
Pour the broth with the beef and bok choy into the individual bowls with the vegetables and noodles. Add extra bean sprouts and green onions or siracha on top.
