Baked Chicken Parmesan

Introduction

Ingredients

    4 chicken breasts
    1 egg
    1/2 c bread crumbs
    1 1/2 c tomato sauce
    2 oz mozzarella, low-fat
    1/4 tsp basil
    1/4 tsp garlic powder
    1/4 tsp oregano

Tips

This is a super basic recipe - feel free to change the spices around until you have something you love. I vary it greatly depending on what I feel like, but it's always a good starter!


Directions

Preheat oven to 375 degrees F. Clean and rinse chicken.

Pour 1/2 c tomato sauce into bottom of baking pan.

In small bowl, mix bread crumbs, basil, garlic powder and oregano. Whisk egg in separate bowl.

Cut chicken breasts in half. Dip chicken in whisked eggs and coat in bread crumb mix.

Place breaded chicken evenly spaced in baking pan. Use remaining sauce to cover chicken. Grate mozzarella over chicken. Cover with foil.

Bake 20 minutes. Remove foil, then bake 10-15 minutes or until cheese is browned.

Serving Size: makes 8 1/2-breast servings
