Chewy Oatmeal Raisin Cookies (Eat your self thin show)

Introduction

Hi this is a recipe from the East yourself thin show. I adjusted the sugar as I don't sweet cookies. The original recipe asked for 1/4 cup applesauce. I just used 1 prepackaged snack cup. Ingredients

    2 tablespoon whiskey or rum
    1/3 cup raisins
    8 tablespoosn unsalted butter
    1/2 cup unsweetened applesauce
    2/3 cup brown sugar
    2/3 cup granulated sugar
    1/2 teaspoon salt
    1 large egg
    1 eggwhite
    1/4 cup skim milk
    2 teaspoons pure vanilla extract
    2 cups all-purpose flour
    1 teasppn baking soda
    1/2 teaspoon cinnamon
    2 cups oats (not instant)

Directions

Set onve rack in middle position. Preheat the oven to 350 F. Line 2 baking sheets with parchment paper or spray with nostick cooking spray, set aside

Sprinkle the whiskey or rum over the raisins in a bowl and let stand while you assemble the batter.

Using a handheld or standing mixe, beat the butter, applesauce, brown sugar, granulated sugar and salt on medim-ig speed until light and fluffy, 2 - 3 minutesscraping dwon the sides of the boul halfway through. Beat in the egg and egg white, milk and vanilla.

In a medium bowl whisk together the flowr, baking soda and cinnamon. Sdd to the batter and beat jut until the flour is absorbed. Gently fold int the oats and raisons with a rubber scraper.

Drop by teaspoon full ( I use a commercial cookie scoope) onthe the prepared baking sheets. Bake 10 - 15 minutes.

Cool on a wire rack!
