Sweet and Spicy ShrimpSubmitted by: RCARPENTER2
1/2 cup lite soy sauce
1/2 tsp red pepper flakes
1/2 tsp sesame oil
1 Tbsp cornstarch
2 packets Sweet'N Low
4 tsp canola oil
2 cups onion, thinly sliced
1 tsp chopped garlic
4 cups zucchini chunks
1/2 bell pepper, cut into strips
12 oz shrimp (cooked and peeled)
Heat canola oil in a non-stick skillet. Add vegetables, and stir-fry until zucchini begins to soften. (To save time, zucchini can be semi-cooked in the microwave before being added to the skillet.) Add shrimp and continue to cook until vegetables reach desired degree of chrispness.
Drain excess liquid from skillet, and add sauce mixture. Stir until sauce coats the vegetables well, and begins to thicken.
Really good served over rice or shirataki noodles!
