Ingredients

1 Large bag of Potato Chips, we perfer Ruffles
4 Cans of Tuna packed in water
4 Tblsp Butter or Canola Oil
    1/4 Cup Flour, I use self-rising
    1 tsp. Onion Powder
    1 Clove Garlic, minced
4 Cups of whole Milk (preferred), 2% or skim may also be used
    Salt and Pepper to taste

Tips

As mentioned before, 2% milk may be substituted without sacrificing flavor. Fat free milk may be used, but the taste will not be the same.

Directions

Preheat oven to 400 degrees. Lightly spray oblong casserole dish with non-stick spray (for ease of cleanup). Line the bottom of the casserole dish with chips until completely covered (about 1/2 the bag). Drain tuna and spread over chips. Top with remainder of chips.

In a large stainless steel pot, melt butter and add garlic, onion powder, salt and pepper. Saute about 1 or 2 minutes to blend flavors. Gradually add flower stirring until a gooey paste is formed. Pour in milk one cup at a time, stirring with wire wisk to remove lumps. Cook on medium-high heat until sauce thickens slightly, approximately 15 to 20 minutes. Pour sauce over chips and tuna. Bake in 400 degree oven until sauce thickens and chips on top are golden brown (approximately 20 - 30 minutes). Remove from oven and allow to set for five minutes before serving. CAUTION: Center will be extemely HOT.
