Introduction

An easy and lighter version of potato soup. An easy and lighter version of potato soup.

Ingredients

    5 medium potatoes, peeled and chopped
    4 cans chicken broth
    1 small onion
    1 jar Real Bacon Bits
    1 Tbsp. margarine (to saute onion)
    1 Tbsp. flour to thicken

Directions

Place potato chunks in microwave safe bowl and cover with water. Microwave for 20 minutes. Saute chopped onion. Heat 4 cans chicken broth, onion, bacon bits and 1 Tbsp. flour to a boil. Add potatoes. Top with shredded cheese, green onions if desired.
