Peanut Butter Cookies (vegan)Submitted by: DIRTYRAYTX
In medium bowl, add flour, baking soda, salt.
In another bowl, preferably a mixing bowl, combine sugar (you can use 1-1/2 cups of sugar or if you want to use a more natural, slowly digested one try splitting into 1/2 sucanat, 1/2 sugar), coconut oil, and peanut butter. Mix until creamy.
Add the water, molasses, and vanilla, and mix until combined. Add in the dry ingredient mixture in 4 parts- mixing until fully combined before adding next part.
Arrange on cookie sheets in 2 tbsp sized balls.
The flavor of these cookies has a predominant coconut flavor, but tastes delicious. If you want more of a peanut butter flavor, you may want to increase the peanut butter to 2 cups.
