VEGGIE ENCHILLADA

Ingredients

    1 CAN BLACK BEANS
    2 CUPS FORZEN CORN, THAWED
    10 OZ FROZEN SPINACH, THAWED
    1/2 CUP ENCHILLADA SAUCE
    1/4 CUP SCALLIONS
    8 TB LIGHT SOUR CREAM
    8 6": CORN TORTILLAS

Directions

In large bowl mix togther beans, corn, spinach, sourcream and scallions. Dip each tortilla into enchillada sauce and place 1/4 cup mixture into each tortilla, roll and sprinkle with cheese. Bake at 350 until enchilladas are hot and cheese has melted.
