Introduction

Great delicious colorful salad for a Summer day, I was craving a salad after my run and I decided to make my own. The Tofu adds the protein needed after a good run and the fresh veggies cool you down from the inside out. The Tofu adds the protein needed after a good run and the fresh veggies cool you down from the inside out.
Number of Servings: 1

Ingredients

    3 oz. Extra Firm Tofu (diced)
    .25 raw Almond slices (added for crunch)
    .5 Whole Kernel Corn
    1 serving Grape tomatoes (can also be cherry)
    2 cups shredded romane lettuce
    1 tbsp Fat Free Ranch Dressing (you might also want to try a chipotle dressing)
    .5 Avocado diced.

    *non-stick cooking spray

Tips

Instead of the almonds you can also add some crunched up tortilla chips. I didn't have any and I like my salads to have a crunch to them...


Directions

Spray cooking spray on pan and then add diced tofu. Time for this is up to you, depends how crunchy you like your tofu, you can also skip this and just add it to your salad.

Mix all other ingredients, add tofu, and enjoy

Serving Size: 1 or 2 serving if you are pairing it with another meal.
