Introduction

Original recipe called for only light mayonaise, I replaced 3/4 cup mayo for sour cream. One of my favorite epicure recipes!! Number of Servings: 8

Ingredients

    1 cup (250 ml) light mayonnaise
    3/4 cup fat free sour cream
    2 tsp (5 ml) Dijon-style mustard - optional
    2 tbsp (20 ml) Epicure's Lemon Dilly Dip Mix
    7 cups (1077g) cooked, diced potatoes
    6 green onions, sliced
    365g hard-boiled eggs, chopped or cut into wedges
    Epicure's Sea Salt, to taste
    Epicure's Black Pepper, to taste

Directions

Cook peeled, cubed potatoes until tender. Boil eggs until hard cooked. Mix all ingredients together. Chill before serving.

Serving Size: makes 8 1 cup servings
