Chicken and Dumplings

Introduction

Number of Servings: 8

Ingredients

    2.5 cups milk
    4 tbsp butter
    4 cups chicken stock
    1-10 oz pig mixed vegetables
    4 tbsp flour
    2-13 oz cans chicken (98% fat free)
    Gnocchi

Tips

We use 1% milk to add richness but you can use skim and it tastes fine too. Also, we typically add more veggies.


Directions

Mix chicken stock, vegetables, and 2 cups milk with Gnocchi. Bring to boil; cook until gnnochi is done. While that is cooking, in a separate pan, mix flour, butter, and 1/2 cup milk to make a roux. Combine and simmer. Salt/Pepper to taste.

Serving Size: makes 8 - 2 cup servings
