Even better the second day. Re-heat with crumbled feta sprinkled over the top as a main course.


Directions

Trim the fresh beans and cut into 3 inch sections. Chop onion and garlic coarsely and saute in oil until soft with 1 TBL each dry oregano and mint, 1 tsp salt and dash of black pepper. Add beans, roasted tomatoes, tomato sauce, and red wine. Simmer on very low for 45 minutes, stir and add water if dry. Continue for 45 minutes more. Add chopped fresh mint and oregano if you have them, adjust seasoning.
