OAMC Chicken Carbanara

Introduction

Ingredients

    16 oz. spaghetti
    1 can evaporated milk
    1.5 chicken breast cooked and cubed
    5 slices of bacon cooked and crumbled
    .5 cup pasta water
    4 eggs
    1 cup parmesan
    veggie of choice (recommend asparagus)
    salt and pepper to taste
    onion and garlic powder if desired

Tips

We only eat half in one dinner. Let the other half cool, and place into a freezer bag. Just thaw and reheat on the stove adding milk if needed for a good consistency.


Directions

Boil salted water for pasta. Cook pasta to al dente. Add fresh veggie 3 minuted before pasta is done. Because I freezer cook, I boil several chicken breasts all at one time, and keep in the fridge until I am ready to use them. If needed, boil or prepare chicken breasts until fully cooked. cube chicken. Same instructions for bacon. Crumble bacon. In mixing bowl, combine milk and eggs. Whisk in .5 cup pasta water. Drain pasta. Return pot to burner and turn to medium heat. add Olive oil. Add pasta. Add milk mixture. Add cheese and seasonings. Stir frequently while pasta thickens. Once thickened, add bacon. Serve immediately.
