Blueberry Pancakes

Introduction

Light fluffy pancakes. These are not thin waxy ones.
Combine dry ingredients in glass 4 cup measure. Mix egg and oil with milk and pour into dry. Stir just until moistened.

Ingredients

    1 cup flour
    1 large egg
    1 cup milk
    1 cup blueberries
    2 Tablespoons baking powder
    2 Tablespoons sugar
    2 Tablespoons canolia oil

Tips

I like to drop blueberries onto each 1/4 cup pancake dough as poured in my electric skiletl sprayed with canolia oil cooking spray.
*I top them with whatever fruit I want (adjust for fruit you add) such as extra blueberries, bananas, chopped apples, or my homemade applesauce (no sugar), poached eggs. Sprinkle fruit with powdered sugar if desired.


Directions

Pour 1 quarter cup mix into hot skillet and drop desired amount of blueberries on each. Flip when browned or beginning to form bubbles.

Serving Size: 6-8 fluffy pancakes using .25 cup for each
