Homemade turkey enchilada casserole

Introduction

I used red enchilada sauce; green could also be used; add jalapeno peppers if you like it really spicy I used red enchilada sauce; green could also be used; add jalapeno peppers if you like it really spicy
Number of Servings: 4

Ingredients

    20 oz Jennie-O 93% lean ground turkey, browned
    6 6" corn tortillas
    10 oz. can red enchilada sauce
    7 oz. can diced green chillis
    4.25 oz. can ripe olives sliced or chopped
    1 can refried beans
    8 oz. grated monterey jack cheese or kraft 2% four cheese blend

Tips

For nutritional info, Kraft 2% four cheese blend was used. Could also use any other mild cheese.


Directions

Spray 11" x 7" casserole w/cooking spray; layer 3 tortillas followed by refried beans to cover, then ground turkey, chillis, olives, 1/2 the cheese & 1/2 the sauce. Repeat layers ending with cheese on top. Bake at 350 degrees for about 25-30 minutes or until cheese is melted.

Serving Size: Makes 6 3" pieces-2 pieces each
