Exotec's Roasted Squash-n-Sweet Taters

Ingredients

    2 cups cubed butternut squash
    2 cups cubed sweet potato
    3 T coconut oil
    3 T Splenda™ Brown Sugar blend
    3 t kosher salt

Tips

I've added pie spice or cinnamon to this - tastes good. This is just the basic recipe. You could add or substitute other veggies.


Directions

Combine all ingredients in a zipper bag and mix well. Allow to sit for about an hour, turning and shaking occasionally.

Pour off the liquid.

Spread cubed veggies on a baking sheet in a single layer, not "cramped".

Cook at 450°, stirring or turning a time or two, for about 45 minutes to an hour (until they're tender).

Serving Size: 8 1/2 cup servings
