Banana Cacao Nut Muffins (gluten free)

Introduction

This recipe can be made without the nuts and Cacao chips easily. I make this with gluten free flours. Can be made with whole wheat flour (1 1/2 cups) instead. Ingredients

    1 cup oat flour
    1/2 cup millet flour (can be made with 1 1/2 cups whole wheat flour)
    1 tsp baking soda
    2 tsp baking powder (decrease to 1 tsp if using wheat flour)
    2 tsp Xathan Gum (omit if using wheat flour)
    2 TBS ground flax seeds
    1 large egg
    1/4 Splenda (can use regular sugar but will change the nutritional facts)
    1/2 soy milk (can substitute milk of choice)
    2 TBSP safflower oil (or canola oil)
    3 ripe bananas smashed
    1/3 cup crushed walnuts
    1/2 cup Ghirardelli 60% Cacao Chips

Tips

This is an easy recipe to alter and experiment with different flours. If using gluten free flour you must use Xanthan Gum otherwise muffins will be flat and very dense. This is a great, low sugar healthy alternative for that sweet tooth. This can easily be made into a vegetarian recipe as well by mixing 2 TBS of ground flax seeds and 1/3 cup of water in place of the egg.


Directions

Preheat oven to 350 degrees. Mix dry ingredients together in a large mixing bowl and set aside. In a separate bowl beat egg then add sugar, milk and oil. Mix well. Smash bananas and add to egg mixture. Mix well. Pour liquid mix into flour bowl, mix well. Add Cacao chips and fold. Put into lined muffin tins and bake for 15-18 minutes.
