Hawaiian Snack Bites from Daisy Brand®

Introduction

A tropical tasty snack!
A tropical tasty snack!

Number of Servings: 12

Ingredients

    1/4 cup flaked coconut
    6 slices whole grain bread
    3/4 cup Daisy Brand Cottage Cheese
    1/2 cup finely diced fresh pineapples
    1/2 cup chopped roasted macadamia nuts
    1/2 cup finely chopped ham
    2 tablespoons finely chopped green onions

Tips


Directions

1. Place the coconut in a small skillet and toast over medium-low heat, stirring frequently, until golden brown. Remove the coconut from the heat immediately.
2. If desired, cut the crusts from the bread. Toast the bread and cut diagonally into quarters to form 24 triangles.
3. Top the toast points with a spoonful of cottage cheese and then top with the pineapple, nuts, ham and green onions.
4. Sprinkle with the toasted coconut before serving.
5. Enjoy!

    Ham, pineapple, and macadamia nuts do not make a dish Hawaiian. Sorry, but I get irked when this type of thing gets labeled as such. - 8/26/12
