IntroductionGREAT quiche with no crust! GREAT quiche with no crust!
10 strips of bacon, cooked crisp and crumbled
6 eggs, beaten
3/4c heavy cream
2 1/2c frozen chopped broccoli OR spinach OR asparagus
1/2lb cheese, shredded
1/4tsp ground pepper
In large skillet, cook bacon until crisp and chop up. Remove all but 1tbsp of drippings. Add onion(optional) and cook until desired colour.
In a large bowl combine eggs, cream, vegetable of choice cheese, salt and pepper. Stir in bacon and onion.
Pour mixture into buttered 10in tart an or 9in deep pie plate. Tent with foil. Bake 1 hour and 15 minutes or until a knife comes out clean. Last 15 minutes remove foil for browning.
Cool 5 minutes and cut into wedges.
Makes 10 servings.
