Ingredients

    Low carb tortillas or whole wheat ones 8"
    Chicken cut up - I use rotisserie chicken (no skin)
    Shredded Monterrey Jack Cheese
    Hatch green chili Enchilada Sauce

Tips

What I like about this recipe is you can make it for any number of people. The Hatch sauce is the best, only 25 cal. per serving and tastes wonderful. Sometimes I add Mrs. Dashes Southwest chipotle seasoning to the chicken mixture. This is fast and delicious


Directions

In a bowl mix chicken with 1/2 the cheese and 1/3 of the sauce. Then put 1/2 I each tortilla toll up and put in microwaveable pan. Pour the rest of the sauce over the enchiladas and microwave for about 2 min. Sprinkle rest of cheese over top and microwave 1 more min. Serve.
