Introduction

Number of Servings: 6

Ingredients

    Lentils, 1 cup 8 oz
    Olive Oil, 2 tbsp
    Ham, extra lean, (5% fat), 0.5 cup, diced
    Onions, raw, 1 small diced
    Celery, raw, 1 stalk, medium diced
    Garlic, 1 clove diced
    Chicken Broth, 1 can (10.75 oz)
    Water, tap, 4 cup (8 fl oz)
    Salt, 1/2 tsp to taste
    Pepper, black, 1/2 tsp to taste

Directions

Put oil in medium pot with ham, celery, onion and garlic. Simmer until tender. Wash Lentils and add. Simmer until beans are tender, about 30 minutes. Soup gets thick, add more hot water if necessary.

Yield: 6 - One Cup Serving

Serving Size: Serves 6 - 1 Cup
