Number of Servings: 6

Ingredients

    3 cups sliced yellow squash
    1/3 chopped red onion
    1/2 of a red bell pepper, chopped
    1 large carrot, shredded
    25 buttery crackers (like Ritz), crumbled
    1 tsp, more or less, margarine
    10 tsp, more or less, parmesan
    2 eggs
    1/2 cup milk

Directions

Slice all veggies. Melt the margarine in a skillet and saute the veggies a few minutes. Crush the crackers and mix with parmesan. Whip the eggs, add milk to them. When I made this, I used 3 slices turkey bacon just in order to use it up. Mix the sauteed veg with the bacon, if used, and 1/2 the cracker mixture in a casserole dish. Pour egg mixture over it. Top with the rest of the cracker mixture. Cook at 400 degrees for 20 minutes.
