Chicken Fajitas

Introduction

I'm gluten free so I eat it without a tortilla. I'm gluten free so I eat it without a tortilla.

Ingredients

    4 Boneless, skinless chicken breasts
    1 Onion
    1 Green pepper
    1 Red pepper
    1 Yellow pepper
    Coconut oil

Tips

Great for lunch the next couple of days too, if there's any leftover.

Directions

Cut the chicken into cubes or slices. Heat the coconut oil in a pan and cook the chicken. While it's cooking, add a variety of spices. I use salt, cumin, crushed red peppers, and Trader Joe's 21 Seasoning Salute. Once the chicken is cooked, put in a bowl to the side. Heat up a little more coconut oil and cook the onion and peppers. When they're at your desired tenderness, add the chicken back to the pan just long enough to make sure it's all mixed together and warm.
