Submitted by: PMGOHIO

Introduction

Cooking the mushrooms before adding them adds so much flavor! You could substitute egg noodles, potatoes or rice for Orzo. Cooking the mushrooms before adding them adds so much flavor! You could substitute egg noodles, potatoes or rice for Orzo.

Ingredients

    3 Tbsp. Olive Oil
    1/4 cup Seasoned Flour
1 lb boneless, skinless chicken, cut into chunks
    2 Tbsp. butter
    2 Tbsp. minced shallots
    2 cloves garlic, minced
    2 cups sliced mushrooms
1 can reduced sodium Cream of Chicken soup
    1 can chicken broth
    1/2 cup white wine
    6 oz. cream cheese
1 cup Orzo (measured dry), cooked according to package directions

Directions

Heat the olive oil. Put flour in large zip lock bag; add chicken chunks and shake to lightly dust pieces with flour (there will be about half the flour left over; discard). Brown the chicken lightly (does not need to be fully cooked); move to separate plate. Add butter, shallots, garlic and mushrooms. Saute over medium heat for 5-6 minutes to allow mushrooms to brown slightly. Add soup, broth, wine and return chicken to pan. Cover pan and simmer for 15-20 minutes to fully cook chicken. Add cream cheese and mix well to fully incorporate. Simmer for additional 5 minutes to melt the cream cheese. Serve over cooked orzo, rice, egg noodles or potatoes.
