Ingredients

2 roma tomatoes
1/2 an avocado
2 tbsp fat free feta cheese
basil
pepper
1/8 cup dry quinoa, cooked, refrigerated/leftover
optional - salt, vinaigrette, and/or garlic
Directions
Chop tomatoes and avocado half. Toss together with feta, basil and pepper, add any other seasonings or dressing you want. Serve with cold cooked quinoa.
