Quinoa - Avo - Mato salad

Introduction

I was sick of lettuce & made this salad for lunch instead. It's high in fat because of the avocado; you could add less if you want. I was sick of lettuce & made this salad for lunch instead. It's high in fat because of the avocado; you could add less if you want.

Ingredients

    2 roma tomatoes
    1/2 an avocado
    2 tbsp fat free feta cheese
    basil
    pepper
    1/8 cup dry quinoa, cooked, refrigerated/leftover
    optional - salt, vinaigrette, and/or garlic

Directions

Chop tomatoes and avocado half. Toss together with feta, basil and pepper, add any other seasonings or dressing you want. Serve with cold cooked quinoa.

Makes 1 (or 2 small) serving.
