Introduction

Number of Servings: 8

Ingredients

    7 large Cremini mushrooms
    4-5 stalks organic Celery, about 1.5 cup, diced
    1/2 large jicama, diced, about 1.5 cup
    Less than 1/2 organic Leek, white & green, chopped
    Organic Baby Carrots, 9 very small ones
    Organic Broccoli Slaw, 6 oz (1/2 package)
    365 Organic Beef-Flavored Broth - mbg, 8 cups
    2 cups (1/2 pkg) frozen organic chopped spinach
    Seasonings (to taste):
    2 bay leaves
    Oregano
    Basil
    granulated garlic
    Black pepper
    Salt (nutrition info is calculated on 1/4 tsp.)

Directions

Chop all the veggies, add to broth in large saucepan or dutch oven. Season to taste. Bring to boil; reduce to low simmer. Simmer gently until vegetables are tender. Serve in mugs or bowls.

Serving Size: About 8 servings - probably 1.5 cups each.
