1 1/2 cups chickpeas (1 can, drained and rinsed) (250g)
2 T nut butter (or other fat source) (see nutritional-info link below for fat-free option)
3/4 tsp baking powder
2 tsp vanilla extract
1/8 tsp baking soda
heaping 1/8 tsp salt
3/4 cup brown sugar*
2 T unsweetened applesauce
1/4 cup ground flax (20g) (see nutritional-info link below for substitution options)
2 and 1/4 tsp cinnamon
You can add a pinch of cream of tartar and/or raisins if desired. You can adjust the amounts of nut butter or applesauce as desired to total 4T. Original recipe calls for 3T peanut butter and 1T applesauce.
Blend all ingredients in food processor until smooth. Bake in a greased 8x8 inch pan for 35-40 minutes.
Blondies should look undercooked when you take them out because they will firm as they cool.
