Introduction

Crock pot chicken, Italian style Crock pot chicken, Italian style
Number of Servings: 6

Ingredients

    6 chix thighs
    1 eggplant, peeled and cubed
    6 oz can tomato paste
    2 cans stewed tomatoes, no salt added
    1 green bell pepper, in strips
    2 small zuchinni
    1/2 cup whole wheat flour
    1/2 cup fiber one cereal, ground
    2 Tb garlic
    canola oil for frying
    Italian seasonings

Directions

Grind cereal in coffee grinder. Mix in shallow dish with flour and seasonings to your taste.
Dredge thighs in mix. Brown in hot oil on both sides.

In crockpot mix remaining ingreds. Add browned chicken. Cook on low up to 5 hours.

May serve over pasta or cooked grains.

Serving Size: 1 thigh with sauce
