2 Eggs (beaten)
1 cup Yogurt
1/4 cup Milk (Optional)
1 cup Cornmeal
1/2 cup Plain Flour
1/2 cup Oats
1/2 tsp Salt
1/2 tsp Baking Soda
1/2 tsp Baking Powder
This is a lovely basic cornbread recipe that can take additions. You can add sugar if you want it sweet. I often add herbs or low fat cheeses. My children love it when I add a small dab of fat free cream cheese to the top of each muffin before baking.
Mix dry ingredients.
Gently fold yogurt and eggs into the dry ingredients. (Do not over mix, stir only until well blended.)
Pour batter into prepared pan.
Bake in preheated oven for 20 to 25 minutes, or until center of the bread springs back when gently pressed.
Serving Size: makes one 8x8 pan or 12 muffins
