Introduction

A delicious summer salad! A delicious summer salad!
Number of Servings: 4

Ingredients

    6 ounces baby spinach
    1/4 cup sliced green onions
    1/4 cup light raspberry vinaigrette
    1 cup sliced fresh strawberries
    1/4 cup chopped walnuts
    2 cups Daisy Brand Cottage Cheese

Directions

Step 1 Toss the spinach and green onions with the vinaigrette; divide evenly onto 4 salad plates.

Step 2 Top each salad with the strawberries and walnuts.

Step 3 Spoon the cottage cheese over the spinach mixture and serve.

Enjoy!

Serving Size: makes 4 1-cup servings

    Inspired my own recipe using leaf lettuce, cucumbers, strawberries and cottage cheese. I am not big on vinagrettes or onions. Plus, when I went shopping, the spinach looked rather wilted so I substituted! - 10/14/12

  • I switched the strawberries to black berries (something I had on hand) and the walnuts with sunflower seeds. For the dressing I used Renée’s® Fieldberry Poppy Seed Vinaigrette - a taste of summer on this cold day! - 11/23/12
