Watercress soup

Introduction

this is a low carb just before dinner filler this is a low carb just before dinner filler
Number of Servings: 12

Ingredients

    5 cups of water cress teh stems seprated from teh leaves, keep both
    1 leak sliced /chopped
    vegetable stock 1.5 litrers
    lemon grass
    seasoning
    olive oil

Tips

I make a batch and them put in the fridge and when I come in from work I pour a cup heat and eat, whilst organizing the kids


Directions

put the leaks into pan with oil and start to sweat them, meanwhile separate the stalks from the leaves of watercress, then chop the stalks ( not all of them about 2 handfuls and put in with leaks. stir and cook, next put in stock I uses a veggie powder stock and add hot water till it looks about right, then get 1 lemon grass stick and put in pan, cook for about 10 minutes hten add half the leaves and cook fo anothe r5 then take out lemon grass and blitz then add rest of leaves and lemon grass and cook for another 15 minutes till nice and infused, you can add garlic a dash of Tabasco and a dash of lime, salt and pepper, it is now ready to serve.

Serving Size: large soup pan will make approx 12 cups
