Healthier Meatloaf Muffins

Introduction

I developed this as a way to make freezable, healthy, nearly instant meals for my 5 year old. The meatloaves cook much quicker in the muffing pans and freeze and thaw beautifully for lunches or quick dinners. No more drive throughs! Number of Servings: 16

Ingredients

    2 packages of 93% lean ground turkey
    3/4 c. old fashioned oatmeal
    2 eggs
    2 T. ground flaxseed
    3/4 c. skim milk
    2 packet Lipton Onion Mushroom dry soup mix
    1/2 c. ketchup

Directions

Combine all ingredients except turkey and let sit for about 30 minutes. Add turkey. Mix well. Put mixture into 12 regular sized muffin cups. The remaining mix will make a small loaf in a separate pan. Bake for 30-40 minutes at 350.
A serving is one meat "muffin" or 1/4 of the remaining small loaf.
