Spicy Thai Noodles with ChickenSubmitted by: TUBLADY
IntroductionWhole grain noodles tossed with sesame oil,hot sauce,honey,garlic,lemongrass ,chicken breast and broccoli slaw, topped with chopped peanuts,scallions, and cilantro. Whole grain noodles tossed with sesame oil,hot sauce,honey,garlic,lemongrass ,chicken breast and broccoli slaw, topped with chopped peanuts,scallions, and cilantro.
2 oz. whole grain spaghetti, 1 cup cooked
4 oz. chicken breast, cooked and cut into 1" pieces
2 cups broccoli slaw, 8 oz. package
1 tbsp. sesame oil
1 tsp honey
1 tsp minced garlic
1 tsp hot chili sauce, such as Sriracha.
1 tbsp.. lemongrass crushed , such as Gourmet Garden herb blend. of chopped organic fresh lemongrass.
1 tbsp. chopped peanuts
1 green onion or scallion ,thinly sliced
1 tbsp. chopped cilantro
1 tsp. of sesame oil for garnish.
I also use asparagus or broccoli florets in this dish.

The Lemongrass herb I get at Walmarts in produce dept.
Can substitute Tofu, 4 oz.. instead of chicken.
In a medium skillet, heat 1 tbsp of sesame oil, garlic,honey, lemon grass, and chile sauce over medium heat, for 1 min. Add the chicken and broccoli slaw, saute for 4 to 5 minutes.
Divide portions on to plate, garnish with onions, chopped peanuts, cilantro and sprinkle other teaspoon of sesame oil over top of dish.
Serving Size: 2 servings 1 1/2 cups each.
