Low(est) Carb Almond Tea Cookies

Introduction

These delicate cookies almost melt in your mouth! Best served soon after baking (amazing when still a bit warm), but will keep in an airtight container. Their texture is a bit chewy, like a coconut cookie. Low Carb has never tasted so good! These delicate cookies almost melt in your mouth! Number of Servings: 20

Ingredients

    2 cups almond flour
    1/2 cup Splenda Sugar Blend for Baking
    1/2 cup softened butter
    1/4 teaspoon salt (if using salted butter, omit salt here)
    2 teaspoon vanilla extract (or 1 tsp vanilla and one teaspoon almond, lemon or orange extract)
    1 egg

Tips

For a more festive look, you can drizzle a little melted chocolate on top or top with a few sliced almonds.


Directions

Preheat oven to 300░F.

Using and electric mixer blend softened butter for a minute. Add remaining ingredients and mix together.

Chill dough to firm (and reduce spreading) and then use two teaspoons to form dough into walnut sized balls and place onto ungreased cookie sheets. Give them room to spread - they will be about 2" in diameter.

Press down lightly with fork (as with peanut butter cookies), then bake for 18-22 minutes until lightly golden around the edges. Baking time and how much they spread may vary depending on your oven and what kind of cookie sheet you use!

Let cool on sheet for a couple of minutes before removing to a rack to cool.

Store airtight :)
