Ingredients

    1/2 clove garlic
    1/4 cup chopped peppers (green, red, orange)
    1/4 cup chopped onion
    1/4 cup snow peas, cut in half
    1/2 cup cooked green lentils
    2 servings (approx 88 g ea) firm tofu (probably better, calorie-wise, to use just one serving)
    1 T (approx) oil for stir-frying
    paprika/rosemary spice blend

Tips

This was something I threw together in a rush because I wanted to use the tofu I had on hand. I had the onions/garlic/peppers already chopped and in the fridge.


Directions

Heat oil
Saute onion/pepper/garlic mixture until softened
Add tofu and seasoning
Saute a little
Add lentils and remaining veggies
Cook until heated through

Serving Size: Makes one large main serving or a few sides
