Introduction

I've taken tips from a few different recipes for low carb fried chicken that I found through google. So this is a mish-mash to suit my own tastes. I've taken tips from a few different recipes for low carb fried chicken that I found through google. So this is a mish-mash to suit my own tastes.
Number of Servings: 12

Ingredients

    3 eggs
    20g double cream

    190g soya flour
    1 tbsp Schwartz chicken seasoning
    big dash salt
    dash black pepper

    an inch or 2 of vegetable oil, to fry in (calculating only about 60g actually goes into the chicken)

Directions

Whisk the eggs and double cream in a bowl to make the chicken wash.

In a separate bowl, mix the soya flour, seasoning, salt and black pepper to make the 'breading'.

Clean your chicken. Dip each pieces first in the breading, then in the egg wash, then back in the breading. Make sure the whole chicken is well covered. Shake off any excess breading.

Carefully place into hot oil and fry until golden brown and crisp—just a minute is enough. Remove the chicken pieces place on baking tray.

Preheat the over to Gas Mark 4. Bake for 20-25 minutes.

Serving Size: Covers 12 pieces of chicken
