Salt, 1.5 tbsp
Sage, ground, 1.5 tbsp
Thyme, ground, 1.5 tbsp
Nutmeg, ground, 1.5 tbsp
Brown Sugar, 4 tsp packed
Fennel seed, 2 tsp
Pepper, black, 1 tsp
crushed red pepper flakes,1 tsp
Rosemary, dried, 1 tsp
Tips
You can use all of the spices listed, or combine just a few. For example, combine rosemary, sage, thyme, salt and pepper for a more traditional-flavored sausage seasoning mix. Add just the nutmeg and brown sugar and omit the salt and pepper if you want a sweeter-tasting sausage.
Use 2 teaspoons per pound of meat.
Directions
Mix all the spices into a small jar and let sit for 30 minutes so the spices combine. Add to 1 lb pork and mix together.
