Introduction

Enchilada quesadilla. Enchilada quesadilla.

Ingredients

    1 burrito size tortilla, whole grain or low carb
    1 tsp enchilada sauce
    1/4 cup Mexican blend shredded cheese
    1/2 fresh jalapeno, diced
    1/2 tbsp onion diced
    2 tbsp light sour cream

Directions

Preheat skillet over med/med-low heat. Coat one side (inside) of the tortilla with enchilada sauce. Spray skillet with cooking spray. Add tortilla (sauce side up). Sprinkle evenly with pepper, onion and cheese. Let cook until cheese is melted and bottom of tortilla in lightly brown. Fold in half with spatula and transfer to plate. Cut into 4 wedges and serve with sour cream.
